Since I have radically cut back on my sugar intake, I have had to get creative with how I treat myself. While the Spring’s raw cacao balls have definately kept me going – they’ve been away this week! So due to the ball shortage (ha ha – still funny, never gets old), tonight I will be making this simple delicious dessert that I can thoroughly recommend.
All you need:
100g Mascarpone (soft Italian cheese YUM)
1/2 cup organic full- fat cream
1/4 tsp vanilla bean powder – or pods – or extract
Fresh fruit of your desire – I’m going with the dark red plums in season at the moment, I have a slight obsession
Optional sweeteners – 1/4 tsp stevia or xylitol (available health food stores)
1. In a bowl whisk together cheese, cream, vanilla and sweetener of your choice. The mixture should thicken and swell in size a little..
2. Slice fruit and serve in a cocktail glass if you have one – presentation helps with these things, trust me…
3. Top with a large dollop of cream cheese mixture. If you want to go crazy and top it with some almonds or biscotti don’t let me stop you….hmmm biscotti however has heaps of sugar – but maybe that can be your little indulgence for the week!
You can actually omit the cream in this recipe if you like. I once had a dessert on a job in Mallorca, Spain. It was quite simply, fresh strawberries with mascarpone. I still remember it to this day – it was THAT good!
